Shrimp Fajitas

No matter what’s going on, Taco Tuesday will likely still be taking place somewhere in the world! Did you know that Taco John trademarked the term “Taco Tuesday” in 1989, which originated from a “Taco Twosday“ deal that priced tacos 2 for 99 cent? He has legal rights to the term in every US state, but New Jersey. The term is now famous and used all over the world, including by NBA’s Lebron James, during his family’s taco nights. I’m sure you heard him saying “It’s TACO-TUEEESSSDDAAAAAAYYYYYY” at least once?!
Anyways, enough chit-chat! Let’s get to the reason you’re here..
Ingredients:
1 lb peeled and deveined shrimp, tail on for presentation, tail off for convenience
Tortillas, any size
Vegetable or olive oil
1/2 red bell pepper, green bell pepper, sliced or julienned (any color will do)
1 onion, sliced
Chilli powder
Paprika
Ground cumin
Garlic powder
Dried oregano
Black pepper
Onion powder
Cilantro, chopped finely
Mexican cheese blend, shredded
Sour cream (optional)
2 Limes
Directions:
Marinate the shrimp in 1 tsp chili powder, 1/2 tsp paprika, 1 tsp ground cumin, 1 tsp garlic powder 1 tsp onion powder, 1 tsp dried oregano, salt/pepper to taste and place in a zip lock bag until ready to cook
Add oil to pan and heat on stove, just a little above the medium setting
Add shrimp to pan one by one
Cook shrimp 1 1/2 min on each side
Remove shrimp from pan
Add more oil to pan, some of the shrimp seasoning should still be present
Add peppers, onions and salt, sauté until lightly crunchy
Turn the stove heat off
Add shrimp and mix with vegetables
Top with cheese, garnish with cilantro
You can add your shrimp and veggies directly to your tortillas, or you can add more toppings to accompany it. Serve it with sour cream, cheese and your favorite tortilla chips, to scoop up the excess food that falls onto your plate. Don’t forget to squeeze some lime juice over the top for added flavor!
Preferred toppings:
Corn Salsa:
1/2 red onion, diced
1 tomato, chopped
Cilantro
Salt
Lime juice
Corn
Combine all ingredients, adding salt and lime juice to taste
Black beans:
Cook prior to meal, as it takes a while, or buy canned beans
